Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Oreo ice-cream chocolate mocha cheescake

 For dessert I made Oreo ice-cream chocolate mocha cheesecake.

I used 1/2 cup Starbucks Mocha Chocolate coffee mixed with 1 cup Philadelphia cream cheese, 1/2 cup sugar, 1/2 cup sour cream, vanilla, vanilla sugar, 2 packaged Oreo cookies, crushed and extra for topping.
1 cup crushed wheat sweet crackers mixed with 1 tablespoon of sugar and 2 tablespoon melt butter. Mixed well and spread in a pie plate. Bake in oven for 8 minutes on 375 degrees F until crust is slightly golden. Out of oven let cool down for 10 minutes. Then spread Oreo cheesecake mixture on top of cracker crust. Place in freezer for 6 hours. I served it when it was dessert time. 


Bacon Wrapped Pork with homemade mushroom sauce

Another dish I made today. Homemade bacon wrapped pork loin with homemade mushroom/onion sauce, and homemade mashed potatoes.

I bought bacon and pork loin at Meny in Hønefoss, Norway. I think that is how you spell it. It used to be an Ica Maxi but now it's a Meny. I wanted to check what they had there because I haven't been there in a while. I have to say, it's a really nice grocery store but I sure do miss American grocery store. I miss the prices, more varieties on meat and other things. The prices are expensive but Norway is an expensive country. I still can't or will ever get use to the price here. I bought 400 gram pork loin cost 39krs that's around 6.20 USDollars and bacon was offer 24krs/4.20 USDollars.

Sliced pork into thin slices. Seasoned and marninade for about an hour. Then wrapped around with bacon, set a side.

Diced 1 onion,2 clove garlic, chopped mushrooms. In a large saucepan heated 3 tablespoon margarine on medium/low heat. Added in onion and garlic, sauteed for 10 minutes. Sprinkled in 2 tablespoons flour and whisked until thicken, then seasoned with salt and pepper, cooked for 3 minutes. Added in chicken stock and cognac whisked, cooked for 5 minutes. Then stirred in mushrooms cooked for 3 minutes. Added in cream. Stirred and let simmer for another 5 minutes. Remove from heat and set a side.

In a large skillet heated a tablespoon olive oil on high heat. I cooked 6 bacon wrapped pork for 5 minutes on each side until golden crispy. Place cooked bacon wrapped pork on a serving plate and let rest for 6 minutes.

On a serving plate. Place mashed potatoes in the center of the plate, then place bacon wrapped pork loin on top, pour mushroom sauce on top and around.

Chorizo pork pasta and bean soup

 It's so nice and quiet at the moment. My kids and husband are sleeping. I felt like this is the time I get to make post until the kids are awake. I wanted to share this because it's easy to make and my whole family loved it. A tasty soup for this great autumn weather. 
I diced chorizo sausages into bite size. I bought 2 packages at Meny grocery store because it was offer. 
400 gram fresh ground pork seasoned with salt, pepper, seasoning sauce, and other spices.
Chopped fresh vegetables into bite size. (3 carrots, 4 stalks celery, fennel, leek).
In a large soup pot I heated 2 tablespoons olive oil on high heat. I stirred in chorizo sausages and ground pork. Cooked until brown for 5 minutes. I removed meat from soup pot, placed meat in a bowl and set a side. Brought soup pot back on the stove and heated another tablespoon olive oil. Added in my vegetable, sauteed for about 4-5 minutes on medium/high heat. Then stirred in cooked sausages and pork. Stirred and mixed with a wooden spoon for 3 minutes. Added in 2 liter of chicken stock, a can of tomato sauce, and 3 cube of chicken bouillon. Stirred, covered, cooked for half hour. Then I added in fresh chopped garlic and other fresh herbs. Simmered for 40 minutes. Added in beans, covered and cook  another 10 minutes. Lowered heat, remove cover, stirred, and added in pasta and cook for about 5-7 minutes. Seasoned for taste. Ladled soup in a bowl and served with toasted sliced French baguettes.





My kids loved this soup. They love sausages, pork, and pasta.

Sonic the Hedgehog and Tails


One of my son's favorite, Sonic the Hedgehog. For his lunch tomorrow I made a Sonic the Hedgehog open face sandwich along with his best friend Tails.


I cut 2 slices of bread, shaping into Sonic and Tails faces. 

For Sonic, I cut out 1 slices of white cheese and nori shaping his face. Then I cut out another slice white cheese for his eyes, mouth, and ears. I used nori for his mouth and eyes.

For Tails, I cut out a slice of cheddar cheese shaped into his face. I cut out a slice of white cheese shaping his mouth area, ears, and eyes. I used nori for his mouth, nose, and eyes. 

Served with healthy fruit salad. (shredded carrots, lettuce, shredded purple cabbages, grapes, blueberries, and diced apple seasoned with salad seasoning).



Spinach and Serrano

Creamy Spinach and Serrano Ham grilled cheese sandwiches. It's so yummy but I will only make this once every 3 months. 

1 tablespoon flora plant margarine
1 cup shredded Serrano ham
6-7 cups fresh baby spinach
1/2 cup sour cream
1/4 cup Philadelphia cream cheese
3 tablespoons mat fløte/food cream


4 Slices a day old loaf bread
4-6 Gouda slices
2 tablespoon  flora plant margarine.

In a skillet on medium/high heat, heated 1 Tbs margarine. I added in Serrano ham and cook until lightly crispy. Lowered heat. Stirred in fresh baby spinach, mixed well for 4-6 minutes. Then I stirred in sour cream, cream cheese, and food cream. Cooked for another 3 minutes. Remove from heat and set aside.


In another skillet on medium/high heat, heated 2 tablespoons margarine.

While waiting for the skillet and margarine to be heated up. I took 4 slices of bread and placed Gouda cheese on each slice, spooned in spinach and Serrano mixture in the middle. Grilled sandwich for about 4+ minutes on each side until golden.

New England Patriots logo sandwich

I made this for my son's lunch for tomorrow. New England Patriots logo and a football sandwich. Our whole family are a fan of New England Patriots. Sandwiches are made with gouda, salami, and sushi nori on Pågen Lantgoda landbrød. It's rare that the Norwegian channels show NFL games. So we do miss out a lot. Go Patriots!

Creamy Chicken Spinach Tortellini Soup

For dinner yesterday I made creamy chicken spinach tortellini soup with a side of cheddar, white cheese, and bacon grilled cheese sandwich. My whole family loved the soup, with fresh spinach ricotta tortellini, tasty chicken broth, had lots of flavor. It's perfect for this cold autumn evening.



2 package Toro Bretagene Chicken sauce with paprika and garlic
1 cup water
1/2 cup Måt Fløte or heavy cream
2 cups chicken stock

1 1/2 cup shredded chicken
1 1/2 cup lightly sauteed celery and onions
4 cubes vegetable bouillon
4 cubes of chicken bouillon

1 cup peas

1/2 cup Måt fløte (food cream/heavy cream)
1/2 cup dry white wine
5 cups fresh baby spinach
1 teaspoon ground black citrus pepper
16 ounces fresh spinach ricotta tortellini
A handful fresh parsley, chopped

In a large soup pot I heated 50 grams plant margarine whisk in 2 packages of Toro bretagene chicken powder with an addition of 1 cup of water and 1/2 cup måt fløte stirring constantly with a whisk until smooth. Then I stirred in chicken broth, added 1 1/2 cup chicken, lightly sauteed vegetables, chicken & vegetable bouillons. Covered and cook on medium/high heat for about 1 1/2 hour- 2 hours.

Added in peas, 1/2 cup måt fløte, 1/2 cup dry white wine. Covered and simmer for 40 minutes.

Stirred in fresh spinach, simmered for another 5 minutes.

In a soup bowl, place in a handful fresh tortellini, ladle in soup, sprinkle with shredded Parmesan and fresh chopped parsley. Served with a side of grilled cheese sandwich.

More of The Simpsons

Today lunch theme I made for my kids are The Simpsons. Homer, Marge, & Maggie. I used 3 slices of bread, a brand called Pågen, cut into their face shaped. Spread cream cheese on top. Cut out cheddar cheese slice into shape of Homer, Marge, and Maggie faces. Then placed on top of the cream cheese spread. I used white cheese cut into circle for their eyes. Sushi Nori for their eye lashes, mouths, noses, and pupils. For Homer mustache/beard cut out from a bologna and Marge's hair are from blueberries.

This was easy to make. Toad from Super Mario Bros. (Salami and cheddar cheese for his mushroom hat. White cheese and Nori for his face. White cheese for his body, cheddar cheese for his vest, and ham for his bottom).

My Neighbor Totoro lunch theme

My kids lunch theme is My Neighbor Totoro. I made Neko bus, the cat bus from my My Neighbor Totoro, just the face (crispy panko coconut chicken patty). I used cheese and nori for eyes, mouth, whiskers, ears.




......and I also made mini Totoro crispy panko coconut chicken patties served with rice, steamed broccoli, rolled ham omelet.


Here is a similar recipe for my crispy panko coconut chicken. Instead of using boneless chicken breast, I used 800 gram  ground chicken.

Spiderman and hearts

I made Spiderman sandwich for my son's lunch for tomorrow. I used red Danish salami, cheese, and sushi nori for Spiderman's mask.


For my daughters I made them heart grilled and ham cheese sandwich.

Spongbob sandwich


I have been busy lately. The only time I get the quietness to my self around the house is late at night or early, early morning. I love making fun lunches for my kids when it's nice and quiet. I made 3 spongbob squarepants chicken sandwiches.

I used 6 slices of bread cut into square shape. Shredded roasted chicken and chorizo and Parmesan cheese sandwich. 

For spongebob. I used cheddar cheese slices, white cheese for his eyes, teeth, shirt, and detail for his face. Salami for his mouth. Red bell pepper for his tie. Nori for eyelashes and eyes. Served with celery stick, cucumber stick, and orange slices.

Quick and simple buffalo chicken tacos


Buffalo Chicken tacos

1 medium onion, minced

2 tablespoons flora margarine
800 grams ground chicken
seasoning salt and fresh ground pepper
garlic powder
chili powder
paprika powder
tablespoons Worcestershire sauce
1 tablespoon corn flour


1 bottle Louisiana hot sauce

In a large bowl added ground chicken seasoned with salt, ground black pepper, garlic, chili, paprika,  Worcestershire, corn flour. Mixed well with my hands.

Heated 2 tablespoons plant margarine in a skillet on high heat. When hot added minced onions, cooked for 4 minutes. Then added ground chicken mixture. Cooked and stirred for 8 minutes. Then added 1 bottle hot sauce, garlic powdered, and freshly ground black pepper, stirred, covered cooked for 3-4 minutes.

I served with taco shells, shredded lettuce, English white cheddar cheese, blue cheese sauce. My family loved it. I thought it would be a bit spicy for my kids but they don't seem to mind. I will definitely make this again.

Chicken and stuffing rolls

I was reading an Food Network article on my Barnes and Noble nook and came across a unique way to make leftover dinner. I had leftover chicken and stuffing so I made into sushi rolls. It taste really good and my kids loved it. I would make this again.

 Simple homemade bread stuffing (celery, onions, herbs, dried cranberries, broth).

 Sushi rice on one side of nori and flipped over topped with lettuce, bread stuffing, mayonnaise, shredded chicken breast, slices cucumber and avocados.

 Rolled and sliced.

Served with side of cranberry sauce and gravy.

Domo-Kun and Boo from Super Mario Bros

Homemade Domo Kun chicken square patties with rice, shape into Boo from Super Mario brothers.

Preheat oven 400 degrees.

In a bowl I added 400 grams ground chicken, seasoned with salt, ground black pepper, paprika, and mayonnaise. Mixed well and shaped into rectangle/squares.

In another bowl I mixed a half cup of panko bread crumbs and 2 tablespoon Parmesan cheese. Then coated chicken square patties with panko bread crumb mixture.

I brushed a little olive oil on a baking sheet,  placed panko chicken square patties on greased baking sheet and brushed a little more olive oil over patties. Baked in the oven on 400 degrees for 10 minutes and turn over and bake for another 5 minutes until golden.

Out of the oven and set aside for it to cool.

For boo shaped rice, I used sushi rice and shaped into a ball than flatten with my palm. I used a tooth pick to shape it's arms, tail, and mouth. I cut a salami into a oval shape that fit into his mouth. Cut out a slice ham shaped into a tongue. Used sushi nori for detail on his tongue and eyes.

For Domo Kun, I cut out 4 small circles for the eyes, cheese for the teeth, and salami for the mouths.

2 slices of bread cut into head shape inside mayonnaise, salami, and ham. 

I used La Vache qui rit cheddar cheese for his hat and Synnøve Lett Gulost for his face. 

Sushi Nori for his smile, eyes, and nose.

Crispy Panko Grilled Chicken Breast



This is one of my family's favorite. Instead of frying, it's grilled. It has great flavor, inside is juicy, and outside is crispy. It goes great with a side of homemade BBQ beans, potato salad, or it makes a great sandwich. I made Crispy Chicken BBQ cheddar cheese sandwich with fresh lettuce tomatoes, and slices of avocado.

For the chicken
4 chicken breast
1/2 cup mayonnaise
1 tablespoon chili powder
1 tablespoon onion powder
1 tablespoon cayenne pepper
Ground citrus pepper & salt

I made a marinade, mixing in a bowl Worcestershire sauce, seasoning sauce, grilled seasoning, red pepper flake, olive oil, crushed 2 clove garlic, ground black pepper.

I pound the chicken breasts with meat pounder. Placed in a large container, mixed in mayonnaise, seasoning, and marinade mixture, salt and pepper. Mixed everthing well with my hand.

I used panko bread crumbs instead of regular bread crumbs. Coated chicken both side with panko bread crumbs. Covered container and put in refrigerator for 3 hours.  

Brush grill pan with a little vegetable oil. Grilled bread crusted chicken breasts on grill pan for 15-20 minutes until golden brown turning twice.

2 slices light toasted bread. Spread one slice with bbq sauce and other slice with mayonnaise. Added 2 slices of laughing cow cheddar cheese, fresh lettuce, fresh slice tomatoes, and fresh slice avocados. Served with potato skins.

Goomba from Super Mario Bros.

For my son's lunch, Goomba sandwich from Super Mario Bros. This was simple to make. 

2 slices of bread (inside is mayonnaise, salami, ham, and cheddar cheese) shaped into a triangle sandwich. 

For the bottom used 2 slices of bread, spread inside with cream cheese, put together, and cut out a shape for his bottom. 

Goomba eyes I used white cheese and black olives, for teeth was white cheese shaped into little triangles. 

Eyebrows and mouth used left over bread crust. 

I also made jello orange slices (kiwi flavor) to go with his lunch, grapes, slices cucumber, and La Vache Qui Rit Cheese (the laughing cow cheese). 


He was so happy when he saw inside his lunch box.

Totoro Sandwich


My daughter loves Totoro. One of her favorite movie is "My neighbor Totoro".  So I made her ham and cheese shaped into Totoro. I cut cheese slice into circle for his belly. I used nori for details on the stomach, eye, nose, and wiskers. I cut half an apple, peeled and I also cut a J shape from a red bell pepper to make an umbrella. She was so happy that I made this for her.

Super Mario lunch

I've made 2 super Mario face open sandwich with a side of pasta salad for my son's lunch. He is going to love this because he loves super Mario. This is my second time making this. I think the second one came out best. I used Swedish bread a brand called Pågen because it's so much easier to make shapes. I used Danish red salami for Mario's hat and for the M logo. Norwegian cheese for the eyes with black olives, cheese for the face, and for the logo on his hat. I used left over bread crust for mustache, side burns, eye brows, and mouth. Red bell pepper for the hat.
