Welcome to my ScandinAsian food blog. A blog about what I like to make in my little Norweigan kitchen, from homemade meals to fun creative sandwiches. My parents gave me the name Sorieya, a Cambodian name, which means sun. I'm originally from the United States. Now I'm currently living in Norway, married to a Norwegian man with 3 beautiful children. It's hard being away from my family back in the States and I miss them everyday. I am not an artist but I love making fun sandwiches for my kids. I am not a professional chef but I love to cook and I love being in the kitchen. I love introducing my children to different kind of international food, introducing food from my childhood and explaining to my kids the history about their culture and food. I love spending those quality time together teaching my little ones how to make bread, Khmer food, and teaching me Norwegian. My Norwegian isn't that great but I do understand just the basics but speaking it, that's another story.

Today was a healthy meal




Dinner for my husband and I was lightly glazed pork loin served with fresh strawberries salad. This is pretty healthy and yummy.

For seasoning my pork loin. I thin sliced pork loin about 7 pieces and seasoned with maple black pepper with garlic, 1 tablspoon dijon mustard, 1 tablespoon honey, paprika, garlic powder, grilled seasoning, and seasoning sauce, extra virgin olive oil.

I bought this sushi meal kit from Meny. It only cost 29kr (4.70USdollars). It's much cheaper buying the meal kit than buying each item separately which will cost more than 300kr (49USdollars). It has the basic essentials. I also bought sushi ginger cost 39kr (6.30 US dollars). So I made lightly marinaded roasted chicken breast, shredded, and turned it into chicken rolls and also made spring rolls, all just for my kids. 







For Dessert:  Thai Sweet Coconut Noodle Dessert (Lawt Chong).  This was so delicious. My daughter Becky loved it. I will make it again for her.

Dennis homemade pizza muffins and mommy's pecan dessert


Today my son and I made mini pizza muffin. He was the one that made the most and I was the one supervising. He told me he had made cookies, cakes, hot dogs at his former barnehagen. It was so cute and nice spending quality time with him. This fall he is starting school. I'm a little sad that my first baby is growing up so fast. 








For dessert I made caramel glazed pecan with thick vanilla sauce. I added pecan nuts with 2 tablespoons  caramel sauce and 1 tablespoon brown sugar in a bowl. Mixing with a spoon, coating every pecans. Made some thick vanilla sauce. Added vanilla sauce in a bowl and topped with glazed pecan. Covered and stored in the freezer for half hour before serving. I didn't get the chance to have any but my husband and son sure did.



Asian Food

For dinner tonight was more like Chinese food but all homemade. Crispy Tempura beer chicken bites, mini chicken fingers, homemade pad Thai, homemade kimchi, and steamed Jasmine rice.


Tempura Beer batter recipe

1/2 cup flour
1/2 cup tapioca flour
1/4 cup cornstarch
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon garlic salt
1 teaspoon white pepper
1 teaspoon baking soda
1 teaspoon baking powder
1 bottle alcohol free beer

In a large container add all ingredients, mix with a fork 



1 1/2 lb fresh chicken breast, cut into bite size. Seasoned chicken with salt, garlic powder, black pepper, cayenne pepper, paprika, 1/2 tablespoon mushroom soy sauce, and 1/2 teaspoon seasoning sauce. Mixed well with my hands.



Pour seasoned/marinaded chicken into my beer tempura mixture.










Covered with lid and shook container so all the chicken were well coated with the batter. Set aside for 15 minutes.




15 minutes later, chicken were well coated.



Dipped chicken few at a time in all purpose flour.



In a deep pot filled vegetable oil half way. Heated pot on medium-high heat. When oil was hot. I fried them 5-7 at a time for 4-6 minutes until golden crisp. Lay them on cooling rack to get rid of excess oil. Placed on a clean plate and continued frying the rest of my chicken.
I made some without coating with flour. They were more like mini chicken fingers like those you get in Chinese restaurant.

Caramel Cappucchino Shake

This was by far one of the best milkshake I've ever made. It even taste better than buying at a cafe or those  McDonald's milkshake.







 2 cups Vanilla ice cream







2-3 Tablespoons Caramel Gourmet Syrup ( I bought this at Meny grocery store in CC Vest storsenter in the coffee isle around 45kr)








1/4 or 1/2 cup milk ( I used extra light milk also has extra vitamin D)





2 packages of Nescafe favourites mix pack ( I used one package of Cafe Vanilla and one package of Cappuccino).










Cappuccino powder for after.





In a blender/smoothie machine I added 2 cups vanilla ice cream, 2 tablespoons caramel syrup (I added a little extra) 2 packages instant coffee powder, and milk. Blend well for 2-3 minutes. Pour into a clean glass. Drizzled a little more caramel syrup, sprinkled a little cappuccino powder, 2 spoonful of vanilla ice cream, and sprinkled a little more cappuccino powder. Served right away. So delicious :-)

Left over.......






With my leftover Southwestern chicken wonton filling. I turned it into delicious chicken salad for tomorrow lunch. I just added 1 cup of low fat sour cream, herb and spices and added 2 hard boiled eggs, peeled and diced. Covered and refrigerating it over night. Perfect on baked fresh bread or fresh baked Norwegian bread.

Homemade tempura beer onion rings



I also made tempura beer onion rings. They were so yummy. I made a lot so I had to freeze the rest. I will make them again, later on. Can't have to much of these. 


2 medium onions. Peeled, sliced them 1/2 inch thick, seperated them into rings.
1/2 cup flour
1/2 cup tapioca flour
1/4 cup cornstarch
1 teaspoon salt
1/2 teaspoon cayenne pepper
1 teaspoon garlic salt
1 teaspoon white pepper
1 teaspoon baking soda
1 teaspoon baking powder

In a large container add all ingredients, mix with a fork













1 bottle Munkholm alkohol free beer
Poured beer slowly little at a time, mixed into the flour mixture. (the whole bottle) Whisk well (batter will be a little lumpy).
Added onion rings into tempura batter, coverd with lid, shake container until onion rings were covered well. Set a side for half hour. I heated vegetable oil in a deep large pot on medium/high heat (filled oil half way). Fried them for about a minute until golden crisp. Layed crispy onion rings on a rack to get rid of excess oil. Served with homemade dipping sauce.
